 Crispy Shrimp with Soybean Mayonnaise 

INGREDIENTS:

 

  • 12 X-large shrimp

  • 2 egg whites

  • 1/4 cup corn starch

  • 1 cup Mayonnaise

  • 2 cloves garlic

  • 1 tsp chili sauce

  • 2 tbsp Soy Paste

  • 1 tbsp soy sauce

  • 2 teaspoon lemon juice

  • 4 heads Bok Choy

  • Salt and Pepper

  • Vegetable oil

  • Cilantro leaves

 

 

DIRECTIONS:

1. Mix Mayonnaise, chopped garlic, chili sauce, soy paste, soy sauce and lemon juice in a bowl, cover and refrigerate. Disassemble and wash the bok choy thoroughly. Dry and set aside.

2. Dry the shrimp with a paper towel and coat with the egg white. Dredge the shrimp in the corn starch seasoned generously with salt and pepper.

3. Heat a pot with enough oil to cover the shrimp to 375 degrees f. Saute the shrimp for around 90 seconds. Do not overcook the shrimp. Remove and set on paper towels.

4. Plate bok choy, shrimp, mayonnaise and cilantro. Serve and eat immeadiately.
