 Crushed Potatoes

INGREDIENTS:

  • 2 large Potatoes

  • 1/2 cup of milk

  • 1/2 cup of cream

  • Salt & Pepper

  • 4 oz of butter

DIRECTIONS:

1. Fill a large pot with water and add salt. Wash the potatoes leaving the skin on. Place the potatoes in the water and gently simmer for 45 minutes.

2. Remove the potatoes and allow to cool. Remove the skins and put the skins back into the water. Reduce until there is 1 cup full of the liquid remaining. 

3. Cube the potato and put back into the reduction. Mix while heating gently. As the liquid is absorbed into the potatoes, add the milk, cream, butter, pepper and salt until a soup like consistency is achieved. Remove from heat and allow the liquid to be absorbed by the potatoes as it cools. Leave for 30 minutes and then gently crush the potatoes with a fork.

4. Heat the mixture to your desired consistency and serve.
