Fish Tacos
INGREDIENTS:
Batter

1lb white fish

1 1/2 cups milk

4 ounces butter
-
1/2 cup warm water

1 tsp yeast
-
1 3/4 cups flour
-
1/2 tsp kosher salt

1 tbsp sugar
-
2 large eggs
-
1/4 tsp baking soda
Tacos
-
Flour tortillas
-
Lettuce
-
Red onion
-
Sweet relish, ketchup, mayonaisse
DIRECTIONS:
1. Combine the milk and butter in a small pan and heat until the butter melts. Allow to cool. Pour warm water into a bowl and add yeast. Let sit for 10 minutes or until the yeast dissolves.
2. Combine the flour, salt and sugar. Add to mixture of milk, butter and yeast. Wisk in the 2 eggs and baking soda. Cover and leave at room temperature for 1 1/2hrs.
3. Heat enough oil to cover the fish in a pan to 350f.
4. Coat each piece of fish with flour and dredge in the batter. Carefully place battered fish into the oil and cook for 2 minutes. Be careful not to add too many pieces of fish to the oil at one time.
5. Remove when golden brown and dry on kitchen paper towels.
6. Assemble fish tacos. Eat
