Garlic Fries
INGREDIENTS:

4 large potatoes

3 cloves garlic
-
4oz butter
-
Kosher/Sea Salt
DIRECTIONS:
1. Peel potatoes and cut into 1/4 inch by 2 inch 'chips'. Rinse in water, drain and dry. Crush garlic and add to butter. Microwave for 27 seconds.
2. Heat oil in pan to 255f and fry for 10 minutes. Remove and increase heat to 375f. Fry for another 3 minutes. Remove and wait for heat to return to 375f. Fry for another 3 minutes removing and immediately re-immersing every 30 seconds until the fries are crispy. Remove from heat and place in a large round stainless steel mixing bowl.
3. Microwave garlic butter for another 27 seconds. Poor the garlic butter over the fries and toss . Add salt liberally and toss again. Serve immediately.
