  Butter Poached Lobster with Beet Essence

INGREDIENTS:

 

  • 3 Lobster tails

  • 3/4 lb  butter for beurre monte

  • 3 beets

  • 1/4 cup white wine

  • 1 tbsp butter for sauce

  •  salt

DIRECTIONS:

 

LOBSTER

1. Heat a water bath to 125°F

2. Remove the lobster tails from their shells.  

3. Place each lobster tail in a vacuum bag with a stick of butter…yes an entire stick.  The point is for the lobster to be poached in butter so you need enough butter to cover the tail once it has melted.  Don’t worry, you will discard the butter after cooking.

4. Place the lobster in the water and cook for 15 minutes.

 

BEET ESSENCE

1. Cut beets in to 4 quarters and add to 2 quarts of boiling water. Reduce by 3/4 and repeat 3 times.

2. Add white wine and reduce combined liquid to 1/2 cup.

3. Immeadiately prior to serving add the 1 tbsp of butter and salt to taste. Blend and serve.
