 Pork Confit 

INGREDIENTS:

  • 2 lbs Pork Shoulder

  • 2 tbsp coarse salt

  • 8 to 10 cups rendered pork fat

 

DIRECTIONS:

1. Cut the pork into 4oz serving portions and sprinkle liberally with coarse salt on all sides. Place in the refrigerator for 4 hours.
2. When ready to cook, scrape away most of the salt.
3. Place the pork in a large stewpot, and cover  completely with rendered pork fat. Place over low heat, and bring the fat to just below the simmering point. Cook over low heat for 2 1/2 hours, making sure the fat doesn't boil. Remove the pork pieces from the fat.
