 Shrimp with Zucchini Pasta

INGREDIENTS:

  • 12 x-large raw shrimp

  • 1/2 smoked sausage

  • 6 cherry tomatoes

  • 1/2 yellow pepper

  • 2 cloves chopped garlic

  • 1/2 cup of cream

  • 1/2 cup white wine

  • 1/4 cup tomato paste

  • 1 cup sliced mushrooms

  • 1/2 diced yellow onion

  • 1 zucchini

  • Salt and Pepper

  • Fresh Basil

  • Chili Flakes

  • Parmesan cheese

 

 

DIRECTIONS:

1. Sauté the onions, sausage and the mushrooms in a little oil until they caremelize. Add the garlic and white wine and simmer until the alcohol has cooked off. Add the tomato paste followed by the cream. Season with salt and pepper and reduce by half.

2. Add the shrimp to the sauce and continue to simmer until they turn pink. Spiralize the zucchini into spaghetti length noodles and add to the sauce. Cook for 1 minute and add the roughly chopped basil. Mix in and plate the food.

3. Grate the parmesan over the dish and sprinkle with the chili flakes.
