 Smoked Mackerel Pate

INGREDIENTS:

 

  • 1lb canned smoked mackerel

  • 1/2 lb cream cheese

  • 3 lemons

  • 1 small bunch cilantro

  • 2 sticks celery, finely sliced

  • 6 slices bread

 

 

DIRECTIONS:

1. Peel the skin off the smoked mackerel. Discard the skin and any excess oil from the can.

2. Put the fish in a food processor, breaking it up slightly as you go. Add the cream cheese, celery, the zest and most of the juice of 1 lemon and a few leaves of cilantro. Blend until you get a nice creamy pâté. Season to taste. 

3. Cut the  remaining lemons into wedges and serve alongside the pâté with toast.
