  Tuna Tartare

INGREDIENTS:

  • “Tartare” of Japanese Blue Fin Tuna

  • Sunchokes

  • Satsuma Mandarins 

  • Pine Nuts

  • Arugala

  • Aged Balsamic

  • Creme Fraiche

  • Safron

  • Vanilla

  • Pea Shoots

DIRECTIONS:

1. Mix Safron, Creme Fraiche and vanilla together.

2. Roast pine nuts.

3. Toss pea shoots with olive oil, balsamic vinegar and mandarin juice

4. Combine onto a spoon or plate.
