“Tartare” of Japanese Blue Fin Tuna

Sunchokes

Satsuma Mandarins
-
Pine Nuts
-
Arugala
-
Aged Balsamic
-
Creme Fraiche
-
Safron
-
Vanilla
-
Pea Shoots
DIRECTIONS:
1. Mix Safron, Creme Fraiche and vanilla together.
2. Roast pine nuts.
3. Toss pea shoots with olive oil, balsamic vinegar and mandarin juice
4. Combine onto a spoon or plate.
